Lindsay's Fresh Mango Bread
Ingredients:
2 cups regular flour
1/4 tsp. salt
3/4 tsp. baking soda
3/4 tsp. baking powder
1 1/4 cups sugar
2 eggs
2" stick of butter
1/4 cup milk
2/3 cup mashed mango (or peaches)
3/8 cup chopped nuts
2 oz. Peach Schnapps
Method:
In medium sized bowl add all dry ingredients and mix together.
Add eggs, butter, milk and blend lightly (just to wet - do not over mix as it makes the dough tough).
Fold in Mangos.
Place into standard, well-greased loaf pan.
Drink 2 oz Peach Schnapps.
Cooking:
Bake at 350 degrees for approximately 50-60 minutes.
Brush with honey and orange juice (1 Tbsp each mixed with sterile finger).
Let stand on baking rack for 15 minutes before serving.
